Rainforest Foods raw Cacao is produced by organic growers in Peru, using the finest Criollo Cacao which is also known as the ‘Queen of Cacao’. It is harvested by hand as pods which are then broken apart and allowed to ferment. The pulp surrounding the beans ferments and eventually runs away as liquid, a process that has a chemical effect on the beans which reduces their bitterness. The beans are then washed before being dried, peeled and their cores extracted, to be broken into pieces or ‘nibs’.
